The potential of Artificial Intelligence (AI), Machine Learning (ML), and Blockchain to transform food processing within the Indian agricultural context is substantial. With India’s agricultural sector contributing to approximately 17-18% of the nation’s GDP and employing nearly 58% of its total workforce, the inefficiencies—manifested in food wastage, inconsistent supply chains, and limited value addition— have direct ramifications for the economy. Recent technological advancements present viable solutions to these challenges, promising not only enhanced economic returns but also sustainable growth for the sector. This paper delves deep into current statistics, shedding light on the multifaceted opportunities these technologies offer.
